Looking to the Future... The Story of Skelly's

Skelly’s Bar has been around for a long time and served many different purposes over the years. Originally, the business functioned as a bar, a grocery store and an undertaking service. The business has come strides since then. While there is no longer a grocery store, there is still a very successful bar, as well as a restaurant and a B&B service. The business has always been in Pat’s family. This meant that Pat grew up with a strong work ethic. In fact, he first started working behind his family’s bar at just 10 years of age. After his grandfather passed away, Pat’s uncle inherited the business. It wasn’t until years later that he and his brother bought the business from their Aunt.

After taking over the business, Pat put a lot of work into it. It needed re-wiring and renovations so that he could get his Publican Licence. He also converted the rooms upstairs so that he could get the B&B up running and extended the business model to include a restaurant and private dining rooms. All of this happened just before the Recession hit in 2007. After all the hard work and renovations, suddenly the business was faced with having 10 newly converted bedrooms and no one to book them. There were times when the B&B was completely empty. However, throughout the downturn, Pat stuck it out and brought the business out the other side, and his dedication paid off. The B&B is now busy and is booked out most weekends. The bar is also enjoying great success. This family orientated pub serves great food and is available for private parties.

Improving Efficiency

While Skelly’s is booming, all businesses need a hand now and again and that’s where GRID comes in. Pat originally used our Cash Advance facility to improve his cash flow. He was so impressed by the ease and flexibility of our service that he has since come back to us. We have also helped to finance the upgrading of his roof, and his purchase of two brand new tills. These full-service tills have made operations faster and more efficient. They not only print out orders in the kitchen but also include a full table plan. This means the chef can get straight to work on customer orders and wait staff can cut out any confusion and get orders out faster.

“Spoilt for Choice”

GRID is delighted to help Pat fund the future success of Skelly’s Pub. It’s a business that knows how to move with the times and stay current. The pub has recently embraced craft beers, having a huge and ever-changing selection in stock.

Pat wants his customers to be “spoilt for choice” when they come through the door. They even offer a takeaway option, so you can enjoy one of their hand-selected craft beers in the comfort of your own home. Pat prides himself on supporting other local suppliers and breweries, such as St Mel’s Brewing which is also located in Co. Longford.

Plans for the Future

He has various plans for expanding and improving his business, including a Brazilian BBQ. Skelly’s already has a large beer garden with custom made Oktoberfest tables, making this the perfect location for his new BBQ. Another of Pat’s ideas is to create a walled garden for growing organic vegetables. This garden will be complete with poly tunnels, so his patrons can see exactly where their food is coming from.
